  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon unflavored gelatin
  • 1 cup heavy cream
  • 1 prepared pie crust

Instructions

  1. In a pot, combine peaches, sugar, and lemon juice. Cook over medium heat until peaches soften.
  2. Sprinkle gelatin over a small amount of cold water to soften, then stir into the warm peach mixture until dissolved.
  3. Let the mixture cool to room temperature.
  4. Whip heavy cream until stiff peaks form, then fold into the cooled peach mixture.
  5. Pour the filling into the prepared pie crust and chill until set, about 4 hours.

Notes

  • For a more intense peach flavor, add a splash of peach liqueur.
  • Serve with whipped cream on top for added indulgence.
