- 2 cups eggplant, diced
- 1 can crushed tomatoes
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped
- 1/2 cup grated Parmesan cheese
