Pasta alla Norma is a classic Italian dish that showcases the flavors of eggplant and tomatoes, making it a hearty and comforting meal.

  • 1 pound pasta
  • 2 cups eggplant, diced
  • 1 can crushed tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, bring water to a boil and cook the pasta according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat and sauté onion and garlic until soft.
  3. Add the diced eggplant and cook until golden brown.
  4. Stir in the crushed tomatoes, salt, and pepper. Simmer for 15 minutes.
  5. Drain the pasta and add it to the skillet with the sauce. Toss to combine.
  6. Serve topped with fresh basil and grated Parmesan cheese.

Notes

  • For a vegetarian option, make sure the Parmesan is not made with animal rennet.
  • Add a pinch of red pepper flakes for some heat.
