  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup green beans, cut
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and brown the beef cubes.
  2. Add chopped onion and garlic, sauté until softened.
  3. Pour in beef broth and bring to a boil.
  4. Add carrots, potatoes, green beans, corn, and thyme.
  5. Season with salt and pepper.
  6. Reduce heat and simmer for about 1.5 hours, or until the meat is tender.
  7. Adjust seasoning as needed before serving.
