  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons Worcestershire sauce

Instructions

  1. Season the beef with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat. Brown the beef in batches.
  3. Add the onion and cook until softened.
  4. Stir in the carrots, potatoes, broth, tomato paste, thyme, bay leaf, and Worcestershire sauce.
  5. Bring to a boil, then reduce heat and simmer for about 2 hours until the beef is tender.
