Oats Upma (with veggies)

A delicious and healthy recipe for Oats Upma packed with veggies.

Ingredients

  • 1 cup oats
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 1 green chili, chopped
  • 1 carrot, diced
  • 1/2 cup peas
  • 2 cups water
  • salt to taste

Instructions

  1. Heat oil in a pan and add mustard seeds and cumin seeds.
  2. Once they splutter, add onions and green chili, sauté until onions are translucent.
  3. Add diced carrot and peas, cook for a few minutes.
  4. Add oats and toast them for a minute.
  5. Pour in water and add salt, bring to a boil.
  6. Cook until the oats absorb water and become fluffy.
  7. Serve hot with a sprinkle of coriander.

Notes

  • For added flavor, mix in some chopped coriander and lemon juice before serving.
