Mushroom and Barley Hamburger Soup

A comforting and nutritious soup combining mushrooms, barley, and hamburger for a hearty meal.

Ingredients

  • 1 pound ground hamburger
  • 1 cup barley
  • 2 cups sliced mushrooms
  • 1 onion, chopped
  • 2 carrots, diced
  • 4 cups beef broth
  • 2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, brown the ground hamburger over medium heat.
  2. Add the onions, carrots, and mushrooms; sauté until tender.
  3. Stir in the barley, broth, water, and seasonings.
  4. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  5. Check the barley for tenderness, and adjust seasoning if necessary.

Notes

  • For a vegetarian version, substitute hamburger with lentils.
  • Can be made ahead and stored for up to three days.
