  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup green beans, chopped
  • 1 cup kidney beans, drained and rinsed
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 4 slices turkey bacon, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy.
  2. Add the onion, garlic, carrots, and celery; sauté until softened.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the diced tomatoes, green beans, and kidney beans.
  5. Season with basil, oregano, salt, and pepper. Simmer for 30 minutes.
