  • 4 large eggs
  • 2 strips turkey bacon
  • 2 ounces chicken ham
  • 1/4 cup feta cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup bell peppers
  • 2 tablespoons chopped olives
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, whisk together the eggs and season with salt and pepper.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop.
  3. Add olive oil to the skillet, then sauté the bell peppers and tomatoes until soft.
  4. Add the chopped turkey bacon and chicken ham to the skillet.
  5. Pour the egg mixture over the sautéed ingredients. Cook until the edges begin to set.
  6. Sprinkle feta cheese and olives on top, then finish cooking until the eggs are fully set.

Notes

  • For a spicier kick, add some crushed red pepper flakes.
