Mediterranean Bean Salad

A light and refreshing Mediterranean bean salad that is perfect for a healthy meal.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, kidney beans, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance for the flavors to meld.
