Instructions

  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  4. Fold in the diced mango gently.
  5. Heat a non-stick skillet over medium heat and pour in 1/4 cup of batter for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
