Ingredients

  • 4 large russet potatoes
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tablespoon garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Green onions for garnish

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, cooking until soft.
  3. Dice the potatoes and add them to the pot, along with chicken broth. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  5. Use a potato masher to partially mash the potatoes for a creamy texture.
  6. Stir in heavy cream and shredded cheddar cheese until melted and combined.
  7. Season with salt and pepper. Serve hot, topped with crispy bacon and green onions.
