  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the oil, egg, milk, and lemon zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra lemon flavor, add a tablespoon of lemon juice to the batter.
  • These muffins are best enjoyed fresh, but can also be frozen for later.
