LEEK POTATO SOUP

A creamy and comforting leek potato soup featuring the delightful taste of turkey bacon.

Ingredients

  • 4 cups leeks, chopped
  • 2 cups potatoes, diced
  • 6 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove bacon and set aside.
  2. Add olive oil and sauté leeks and garlic until softened.
  3. Add potatoes, broth, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Blend the mixture until smooth. Stir in heavy cream and bacon.
  5. Serve warm, garnished with additional bacon if desired.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
