Lebanese Lentil Soup

A warm and comforting Lebanese lentil soup that’s both easy to make and healthy.

Ingredients

  • 1 cup green or brown lentils
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 1 potato, peeled and diced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onions and garlic, sauté until translucent.
  2. Add carrots and potatoes, cooking for another 5 minutes.
  3. Stir in the lentils, cumin, and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  5. Season with salt and blend if desired for a creamy texture.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For extra flavor, add a splash of lemon juice before serving.
  • This soup can be blended to a smooth consistency if preferred.
