Keto Lemon Bars

A deliciously indulgent treat that won’t ruin your keto diet.

Ingredients

  • 1 cup almond flour
  • 1/4 cup granulated erythritol
  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, erythritol, and melted butter until crumbly.
  3. Press the mixture into the bottom of a lined baking dish.
  4. Bake for 10-12 minutes, or until golden.
  5. In another bowl, whisk together eggs, lemon juice, lemon zest, baking powder, and salt.
  6. Pour the lemon mixture over the crust.
  7. Bake for an additional 20-25 minutes until set.
  8. Allow to cool, then cut into squares.

Notes

  • Store leftovers in the fridge.
  • Can be dusted with additional erythritol for extra sweetness.
