Jammy Egg, Avocado & Pesto Toast

A delightful breakfast dish featuring jammy eggs, creamy avocado, and aromatic pesto.

Ingredients

  • 2 large eggs
  • 1 ripe avocado
  • 2 tablespoons pesto
  • 2 slices of toasted bread
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to a boil, then gently add the eggs and boil for 6-7 minutes.
  2. Remove eggs from hot water and place in an ice bath to cool.
  3. Peel the eggs and set aside.
  4. In a bowl, mash the avocado and season with salt and pepper.
  5. Spread the mashed avocado on the toasted bread.
  6. Add a tablespoon of pesto on top of the avocado.
  7. Slice the jammy eggs and place them atop the toast.
  8. Serve immediately.

Notes

  • For extra flavor, add red pepper flakes or a drizzle of olive oil on top.
