- 2 large eggs
- 1 ripe avocado
- 2 tablespoons pesto
- 2 slices of toasted bread
- Salt and pepper to taste
- Bring a pot of water to a boil, then gently add the eggs and boil for 6-7 minutes.
- Remove eggs from hot water and place in an ice bath to cool.
- Peel the eggs and set aside.
- In a bowl, mash the avocado and season with salt and pepper.
- Spread the mashed avocado on the toasted bread.
- Add a tablespoon of pesto on top of the avocado.
- Slice the jammy eggs and place them atop the toast.
- Serve immediately.
