- 2 cups rice
- 1 pound chicken thighs
- 4 cups chicken stock
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Rinse the rice under cold water until the water runs clear.
- Set the Instant Pot to sauté mode, and add a little oil.
- Add the chicken thighs to the pot and brown on each side for about 3-4 minutes.
- Remove the chicken from the pot and set aside.
- Add the rinsed rice, chicken stock, garlic powder, onion powder, and paprika to the pot, stirring to combine.
- Place the chicken thighs on top of the rice mixture, then close the lid and set the valve to sealing.
- Cook on high pressure for 10 minutes, then allow a natural release for 10 minutes before manually releasing the remaining pressure.
- Fluff the rice with a fork and serve.
