Instant Pot Chicken and Rice

This Instant Pot Chicken and Rice recipe is perfect for busy nights, providing a comforting meal in no time.

Ingredients

  • 2 cups rice
  • 1 pound chicken thighs
  • 4 cups chicken stock
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Set the Instant Pot to sauté mode, and add a little oil.
  3. Add the chicken thighs to the pot and brown on each side for about 3-4 minutes.
  4. Remove the chicken from the pot and set aside.
  5. Add the rinsed rice, chicken stock, garlic powder, onion powder, and paprika to the pot, stirring to combine.
  6. Place the chicken thighs on top of the rice mixture, then close the lid and set the valve to sealing.
  7. Cook on high pressure for 10 minutes, then allow a natural release for 10 minutes before manually releasing the remaining pressure.
  8. Fluff the rice with a fork and serve.

Notes

  • This dish can be made with chicken breasts instead of thighs if preferred.
  • Add vegetables like peas or carrots for extra nutrition.
