  • 1/2 cup melted butter
  • 1 cup sugar
  • 1 large egg

  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add melted butter to the bananas, mixing well to combine.
  4. Stir in the sugar, egg, and vanilla extract until fully incorporated.
  5. Sprinkle baking soda and salt over the mixture and stir to combine.
  6. Mix in flour until just combined; do not overmix.
  7. In a small bowl, combine ground cinnamon and brown sugar.
  8. Pour half of the banana batter into a greased loaf pan.
  9. Sprinkle half of the cinnamon sugar mixture over the batter.
  10. Pour in the remaining batter and top with the rest of the cinnamon sugar.
  11. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  12. Allow to cool before slicing.
