  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Mix in the flour until just incorporated.
  7. In a small bowl, combine cinnamon and sugar for the swirl.
  8. Pour half of the banana bread batter into the prepared loaf pan, sprinkle half of the cinnamon sugar mixture over the top, then add the remaining batter and top with the rest of the cinnamon sugar.
  9. Bake for 60-65 minutes, or until a toothpick comes out clean.
  10. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • This banana bread can be stored at room temperature for 2-3 days.
  • For longer storage, wrap it tightly in plastic wrap and freeze for up to a month.
