High Protein Broccoli Cheddar Soup

A delicious and healthy High Protein Broccoli Cheddar Soup that incorporates Turkey Bacon for an extra twist.

Ingredients

  • 4 cups broccoli florets
  • 1 cup diced turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add broccoli and chicken broth; bring to a boil and simmer until broccoli is tender.
  4. In a small bowl, whisk together milk and flour until smooth; add to the soup.
  5. Stir in cheese until melted and creamy. Season with salt, pepper, and cayenne.
  6. Serve topped with crispy turkey bacon.

Notes

  • For a vegetarian option, omit turkey bacon and use vegetable broth.
  • Adjust thickness by adding more or less milk.
