High Protein Broccoli Cheddar Soup

A delicious and nutritious soup packed with protein and flavor, featuring fresh broccoli, hearty turkey bacon, and creamy cheddar cheese.

  • 4 cups broccoli florets
  • 1 cup chopped turkey bacon
  • 1 cup shredded cheddar cheese
  • 4 cups chicken broth
  • 1 cup milk
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until onion is translucent.
  2. Add chopped turkey bacon and cook until crispy.
  3. Pour in chicken broth and bring to a boil. Add broccoli and cook until tender.
  4. Reduce heat, stir in milk and shredded cheddar cheese until melted and smooth.
  5. Season with salt and pepper, then serve warm.

  • For a thicker soup, blend a portion of the soup and return it to the pot.
