Healthy Street Corn Pasta Salad

A refreshing take on pasta salad by combining the flavors of street corn with turkey bacon.

Ingredients

  • 2 cups cooked pasta
  • 1 cup corn, grilled
  • 4 slices turkey bacon, cooked and crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked pasta, corn, turkey bacon, cherry tomatoes, red onion, cilantro, and feta cheese.
  2. In a separate small bowl, mix together the mayonnaise, lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the pasta salad and toss until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicier kick, add diced jalapeños.
  • Can be made a day in advance for better flavor.
