Healthy Mexican Street Corn Pasta Salad

A delicious and healthy twist on the traditional Mexican street corn, combining pasta and turkey bacon for a filling meal.

Ingredients

  • 8 ounces pasta
  • 1 cup corn, grilled
  • 6 strips turkey bacon, cooked and chopped
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine cooked pasta, corn, turkey bacon, red bell pepper, red onion, and cilantro.
  3. In a small bowl, whisk together mayonnaise, lime juice, chili powder, and salt.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Sprinkle feta cheese on top, gently mixing it in.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicier flavor, add diced jalapeños.
  • This salad is best served cold.
