- 1 cup corn, grilled
- 6 strips turkey bacon, cooked and chopped
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt to taste
- Cook pasta according to package instructions. Drain and set aside.
- In a large bowl, combine cooked pasta, corn, turkey bacon, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together mayonnaise, lime juice, chili powder, and salt.
- Pour the dressing over the pasta mixture and toss to combine.
- Sprinkle feta cheese on top, gently mixing it in.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a spicier flavor, add diced jalapeños.
