Ingredients

  • 1 cup zucchini, grated
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in the carrots and zucchini, cook until softened.
  4. Add diced tomatoes, basil, oregano, salt, and pepper.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Blend the sauce until smooth using an immersion blender.
