Healthy Carrot Cake Banana Bread

A delicious and healthy way to enjoy the flavors of carrot cake and banana bread combined, perfect for breakfast or a snack!

Ingredients

  • 2 cups shredded carrots
  • 1 cup ripe mashed bananas
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup crushed walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine shredded carrots, mashed bananas, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.
  3. In another bowl, mix whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until just combined. Fold in crushed walnuts if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  • Serve warm or at room temperature.
  • This banana bread can be stored at room temperature for up to 3 days or refrigerated for up to a week.
