- 2 cups shredded carrots
- 1 cup ripe mashed bananas
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup crushed walnuts (optional)
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine shredded carrots, mashed bananas, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.
- In another bowl, mix whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients until just combined. Fold in crushed walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
