Grilled Chicken Avocado Melt – Easy Healthy Sandwich

Ingredients

  • 2 grilled chicken breasts
  • 1 ripe avocado
  • 4 slices whole grain bread
  • 4 slices mozzarella cheese
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. In a bowl, mash the avocado and mix in lime juice, salt, and pepper.
  3. On two slices of bread, layer grilled chicken, the avocado mixture, and mozzarella cheese.
  4. Top with remaining bread slices.
  5. Brush the outside of the sandwiches with olive oil.
  6. Grill each sandwich for about 3-4 minutes on each side, or until golden brown and cheese is melted.
  7. Slice and serve warm.
