  • 12 corn tortillas
  • 2 cups cooked shredded chicken
  • 1 cup green enchilada sauce
  • 1 cup shredded cheese
  • 1/2 cup diced onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the shredded chicken, half of the green enchilada sauce, cheese, onion, cilantro, cumin, salt, and pepper.
  3. Warm the tortillas in a skillet just until pliable.
  4. Fill each tortilla with the chicken mixture, roll them up, and place seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with more cheese.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
  7. Serve hot, garnished with extra cilantro.
