Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.

  4. Fill each tortilla with the chicken mixture, roll them up, and place them in a baking dish.
  5. Pour remaining enchilada sauce over the filled tortillas and top with remaining cheese.
  6. Bake for 20-25 minutes until cheese is bubbly.
  7. Serve with sour cream on the side.
