Ingredients

  • 1 pound chicken breast, cubed
  • 4 cups gluten-free chicken broth
  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup butter, melted
  • 1 large egg
  • 1 cup milk
  • 1 cup frozen peas and carrots

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the cubed chicken and cook until no longer pink.
  3. In a bowl, mix gluten-free flour, baking powder, salt, and pepper.
  4. Stir in melted butter, egg, and milk until smooth.
  5. Drop spoonfuls of the dumpling mixture into the boiling broth.
  6. Add frozen peas and carrots, cover, and simmer for 15 minutes.
