  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup molasses
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the brown sugar and butter until light and fluffy.
  4. Add the eggs and molasses to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
  6. Fill each muffin cup with the batter, about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let cool before serving.

Notes

  • For extra flavor, consider adding chopped nuts or chocolate chips.
  • These muffins freeze well, so make a double batch!
