  • 3 pounds beef chuck roast
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup French onion soup
  • 2 tablespoons Worcestershire sauce
  • 3 sprigs fresh thyme
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Season the beef with salt and pepper.
  3. Heat olive oil in a large oven-safe pot over medium-high heat.
  4. Sear the beef on all sides until browned, about 4-5 minutes per side.
  5. Remove the beef and set aside.
  6. Add sliced onions and garlic to the pot, cooking until softened.
  7. Stir in beef broth, French onion soup, and Worcestershire sauce.
  8. Add thyme and return the beef to the pot.
  9. Cover and transfer to the oven, cooking for 3 hours or until tender.
  10. Rest the beef for 10 minutes before slicing and serving.
