  • 1 cup granulated sugar
  • 1 cup shredded coconut
  • 1 cup coconut milk
  • 1/2 cup unsalted butter
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In another bowl, combine the flour, baking powder, and shredded coconut.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with coconut milk.
  6. Stir in the vanilla extract.
  7. Pour the batter into a greased cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.
