  • 1 pound chicken breast, diced
  • 1 can coconut milk
  • 2 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup bell peppers, sliced
  • 1 cup spinach
  • 2 green onions, chopped
  • 1 lime, juiced

Instructions

  1. In a pot, heat olive oil over medium heat.
  2. Add the diced chicken breast and sauté until cooked through.
  3. Stir in the red curry paste and cook for another 2 minutes.
  4. Pour in the coconut milk and chicken broth, then bring to a simmer.
  5. Add fish sauce, brown sugar, bell peppers, and spinach.
  6. Cook for another 5-7 minutes until the vegetables are tender.
