  • 6 cups diced potatoes
  • 1 cup chopped turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chopped green onions

Instructions

  1. In a slow cooker, combine the diced potatoes, turkey bacon, onion, and garlic.
  2. Add the chicken broth and season with salt, pepper, and paprika.
  3. Cover and cook on low for 7 hours or high for 4 hours.
  4. About 30 minutes before serving, stir in the cream cheese until melted.
  5. Before serving, mix in the cheddar cheese and top with green onions.

Notes

  • For added creaminess, blend some of the soup before adding cream cheese.
