6 cups diced potatoes
1 cup chopped turkey bacon
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
8 ounces cream cheese
1 cup shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1/4 cup chopped green onions
Instructions
In a slow cooker, combine the diced potatoes, turkey bacon, onion, and garlic.
Add the chicken broth and season with salt, pepper, and paprika.
Cover and cook on low for 7 hours or high for 4 hours.
About 30 minutes before serving, stir in the cream cheese until melted.
Before serving, mix in the cheddar cheese and top with green onions.
Notes
For added creaminess, blend some of the soup before adding cream cheese.
Feel free to add other vegetables like carrots or celery for more flavor.
