Easy Lemon Chicken Orzo Soup Recipe

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 2 lemons, juiced and zested
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 2 cups spinach
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned; remove and set aside.
  3. Add onion and garlic; sauté until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Add orzo, carrots, and celery; return to a boil.
  6. Reduce heat and simmer for 10 minutes.
  7. Stir in cooked chicken, lemon juice, lemon zest, thyme, pepper, and spinach.
  8. Cook until spinach is wilted. Adjust seasoning with salt.
