  • 1 pound turkey bacon
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the diced onion and garlic to the pot and sauté until softened.
  3. Stir in the crushed tomatoes, chicken broth, and Italian seasoning. Bring to a simmer.
  4. Add the broken lasagna noodles and cook until al dente.
  5. Mix in the ricotta cheese until well combined.
  6. Top with mozzarella cheese and allow to melt slightly before serving.
  7. Garnish with fresh basil and crumbled turkey bacon.

  • For a vegetarian option, omit the turkey bacon and replace with mushrooms or additional vegetables.
