These easy flourless pumpkin muffins are a healthy, moist, and naturally sweet treat perfect for any time of the day.

Ingredients

  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. In a mixing bowl, combine pumpkin puree, eggs, honey (or maple syrup), and vanilla extract. Mix well.
  3. In another bowl, mix almond flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fill each muffin liner about 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • For added sweetness, you can include chocolate chips or nuts in the batter.
  • These muffins are best enjoyed fresh but can be stored for later consumption.
