- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners.
- In a mixing bowl, combine pumpkin puree, eggs, honey (or maple syrup), and vanilla extract. Mix well.
- In another bowl, mix almond flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fill each muffin liner about 2/3 full with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
