Easy Creamy Lasagna Soup

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) crushed tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef with the chopped onion and minced garlic over medium heat.
  2. Add the broth, crushed tomatoes, tomato sauce, and Italian seasoning; bring to a boil.
  3. Add the broken lasagna noodles and cook until tender, about 10 minutes.
  4. Stir in the ricotta cheese and half of the mozzarella; mix until well combined.
  5. Serve hot, garnished with remaining mozzarella and Parmesan cheese.

Notes

  • This soup can be easily made vegetarian by substituting ground beef with lentils or mushrooms.
