  • 1 tablespoon olive oil
  • 1 pound chicken thighs, boneless and skinless
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 4 cups chicken broth
  • 2 cups biscuit dough
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken thighs and cook until browned on both sides.
  3. Remove the chicken and set aside. In the same pot, add the carrots, celery, and onion, cooking until softened.
  4. Pour in the chicken broth, then return the chicken to the pot.
  5. Season with salt, pepper, and thyme. Bring to a simmer.
  6. Drop spoonfuls of biscuit dough on top of the simmering soup and cover the pot.
  7. Cook for 15-20 minutes, until the dumplings are cooked through.

Notes

  • For a heartier dish, add peas or corn.
  • This dish can be made with leftover chicken as well.
