Easy Chicken and Dumplings with Biscuits

  • 1 pound chicken thighs
  • 4 cups chicken broth
  • 1 cup celery, chopped
  • 1 cup carrots, sliced
  • 1 onion, diced
  • 3 cups biscuit dough
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, celery, and carrots. Sauté until softened.
  2. Add chicken thighs and season with salt, pepper, and thyme. Pour in chicken broth and bring to a boil.
  3. Reduce heat and let simmer for 20 minutes until chicken is cooked through.
  4. Remove chicken, shred it, and return to the pot.
  5. Drop biscuit dough by spoonfuls into the broth, cover, and cook for about 15 minutes or until biscuits are fluffy and cooked through.
