Easy Birria Tacos Recipe

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 12 corn tortillas
  • 2 cups shredded cheese
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
  2. Add beef chuck, bay leaves, cumin, chili powder, oregano, diced tomatoes, and beef broth.
  3. Bring to a boil, reduce heat, and simmer for 2-3 hours until beef is tender.
  4. Shred the beef and return to the pot.
  5. Heat tortillas on a skillet, fill with beef mixture, and top with cheese.
  6. Serve with lime wedges.

  • For extra flavor, marinate the beef overnight.
