Easy Baked Potato Soup

  • 6 large potatoes, peeled and diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add diced potatoes and chicken broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream, salt, pepper, and paprika; blend until smooth.
  6. Mix in chicken ham and half of the crispy bacon.
  7. Serve hot, topped with cheddar cheese, remaining bacon, and chives.

Notes

  • You can substitute with regular bacon if preferred.
  • This soup can be made ahead of time and stored in the fridge.
