- 1 cup lentils
- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt to taste
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh cilantro for garnish
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- Add onions, garlic, and bell pepper to the pot and sauté until softened.
- Add lentils, chicken broth, diced tomatoes, chili powder, and cumin. Bring to a boil, then reduce heat and simmer for about 30 minutes until lentils are tender.
- Stir in the chicken ham and cook for an additional 5 minutes.
- Serve with sliced avocado, lime wedges, and garnish with fresh cilantro.
Notes
- For a spicier soup, add diced jalapeños while sautéing the vegetables.
- You can also add corn for extra sweetness and texture.
