Crock Pot Beef Stew

A hearty and delicious crock pot beef stew that incorporates turkey bacon for a savory twist.

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices turkey bacon, chopped
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, brown the beef chuck on all sides.
  3. Add the beef to the crock pot along with the cooked bacon, beef broth, potatoes, carrots, onion, garlic, thyme, rosemary, tomato paste, Worcestershire sauce, and bay leaf.
  4. Stir to combine, then cover and cook on low for 8 hours or high for 4 hours.
  5. Before serving, season with salt and pepper to taste. Remove the bay leaf.

Notes

  • This stew is great for meal prep and tastes even better the next day.
  • Feel free to add other vegetables like peas or celery.
