- 2 pounds beef chuck, cut into 1-inch cubes
- 4 slices turkey bacon, chopped
- 4 cups beef broth
- 4 medium potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 bay leaf
- Salt and pepper to taste
- In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
- In the same skillet, brown the beef chuck on all sides.
- Add the beef to the crock pot along with the cooked bacon, beef broth, potatoes, carrots, onion, garlic, thyme, rosemary, tomato paste, Worcestershire sauce, and bay leaf.
- Stir to combine, then cover and cook on low for 8 hours or high for 4 hours.
- Before serving, season with salt and pepper to taste. Remove the bay leaf.
