Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large bowl, season the beef with salt and pepper.
  2. In a skillet, brown the beef on all sides.
  3. Transfer the beef to the crock pot.
  4. Add beef broth, carrots, potatoes, onion, garlic, tomato paste, thyme, and rosemary to the crock pot.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Serve hot.

Notes

  • For added flavor, you can sauté the vegetables in the skillet after browning the beef.
  • Feel free to add other vegetables like peas or corn.
