CREAMY TUSCAN SHRIMP LINGUINE

  • 8 ounces linguine
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the linguine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp and cook until pink and opaque.
  4. Stir in sun-dried tomatoes, heavy cream, and Italian seasoning. Bring to a simmer.
  5. Add spinach and Parmesan cheese. Stir until spinach wilts and cheese melts.
  6. Toss the cooked linguine in the sauce until evenly coated. Season with salt and pepper.
  7. Serve immediately, garnished with additional Parmesan if desired.
