Creamy Parmesan Cajun Chicken Pasta Soup

Ingredients

  • 1 pound chicken breast
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup pasta of choice
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, cooking until soft.
  3. Season the chicken with Cajun seasoning and add to the pot, cooking until browned.
  4. Add chicken broth and bring to a boil.
  5. Stir in pasta and cook until tender.
  6. Reduce heat, add heavy cream and Parmesan cheese, stirring until well combined.
  7. Season with salt and pepper before serving.

Notes

  • Adjust the spiciness by varying the amount of Cajun seasoning.
  • For a thicker soup, add more pasta or reduce the broth.
