  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup uncooked pasta
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat and add the diced chicken. Cook until browned.
  2. Add the chopped onion, garlic, and bell peppers. Sauté until softened.
  3. Stir in the diced tomatoes, chicken broth, and Cajun seasoning. Bring to a simmer.
  4. Add the uncooked pasta and cook until al dente.
  5. Stir in the heavy cream and Parmesan cheese until melted and combined.
  6. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

  • For a spicier version, add additional Cajun seasoning.
