Creamy Lasagna Soup

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups broth (chicken or beef)
  • 1 can (28 ounces) crushed tomatoes
  • 12 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat and drain excess fat.
  2. Add the onion and garlic, sauté until softened.
  3. Stir in the broth and crushed tomatoes, bring to a boil.
  4. Add the broken noodles and Italian herbs, simmer until the noodles are tender.
  5. Stir in ricotta cheese and half of the mozzarella until melted and well combined.
  6. Serve hot, garnished with remaining mozzarella and Parmesan.

  • This soup can be made ahead of time and reheated.
