  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup corn
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned.
  2. Remove chicken, shred, and set aside.
  3. Add onion and garlic to the pot, sauté until translucent.
  4. Stir in chicken broth, tomatoes, black beans, chili powder, and cumin. Bring to a boil.
  5. Add corn and heavy cream; return shredded chicken to the pot.
  6. Simmer for 10 minutes, then stir in cheese and cilantro before serving.

Notes
